matzah balls
Nov. 25th, 2010 01:46 amYesterday, Jonathon made a batch of soup to use up our accumulation of farm-share greens. It was tasty: dill, potatoes, onions, leek, flavorful celery, a few carrots, and a bit of mushrooms. He added matzah balls. (see previous post in which I, like Randy Monroe's characters, realize I'm a grown-up now and can make/eat matzah balls whenever I want) Clever man.
Unfortunately, he put in only 1 envelope for the whole batch of soup.
So of course all the matzah balls are gone by now but one. (Actually, all the servings of broth but one are gone too. It was good soup.)
We were cooking again tonight, and I expressed my plans to make an additional batch of matzah balls -- in plain water if necessary. (I bought more mix at the store today, when picking up emergency milk.) Jonathon was skeptical. Would they get eaten before we leave? I reassured him, and while my hands were occupied, asked him to set the package soaking with its eggs.
"One packet, you mean?" he confirms. "Yeah, just one package" I say, contrasting with the two packages my family usually puts into a batch of soup. "I hope this box has divided envelopes" muses Jonathon... baffling me, who totally had intended the entire box. I then had to reassure Jonathon again. :-) "I will take them all on the plane!!"
Status update: boiled them in two batches, since we did prep only one packet initially. As the second batch cook, the first batch are down to 4. (Now 3). Jonathon is no longer concerned. :-D
Yum, matzah balls!
Status update: hmmm, overcooked the second batch a bit -- they are soft all the way to the center. I'd shaped them smaller, too. In the matzah-ball version of "floater" vs "sinker", I am one of those weirdos who like dense matzah balls. Not dry in the center, but dense and toothsome.
(Maybe one packet would have been enough... this is kind of a lot...)
