marble fudge

I made fudge!
USING, and this is key, my smooth marble board that the Wittenbergs gave to me. :-) In fact, they let me have it because I was interested in it expressly for fudge.
And it's all thanks to a camp trip years ago that didn't make it to Montreal but instead took us to Amish Country. Since then, I have daydreamed of making fudge like I saw the fudgemakers by Hershey doing. They had a kitchen with one glass wall so you could watch the bakers as they slathered heavy dark batter around with big paddles on expansive marble countertops. It looked glorious. The contrast of the smooth, heavy, light-grey marble and the plasticity of the cooling chocolate appealed to me.
I've had my eye out ever since then.
So, yours truly's debut batch of fudge (made with the recipe off the side of a Hershey's Cocoa tin, and with the assistance of my housemate Jason) will be served at the Halloween party tomorrow night.
